Workshops
Our Food Technology workshops, run by professional chefs, are a fun and interactive way to learn. Our Chef will demonstrate a range of practical food skills, methods and processes, students will then produce a traditional Italian dish from the local region, using local produce.
Key Visits
Sorrentoolio Olive Oil Manufacturer
Olive oil cultivation is extremely important to this area. Students will visit the olive grove to learn about the olive harvest, which uses the traditional method of ‘nibbling’, designed to protect the fruit and avoid speeding up the fermentation process. They'll see production in the new mill using the traditional method of ‘cold pressing’, as well as the ancient mill to help understand how production processes have changed over the last 100 years. Finally, take part in a technical olive oil tasting and receive a small memento from the visit.
Caseificio Michelangelo Cheese Producer
This family run cheese business was established over 60 years ago and has a reputation for producing world-class products. Production here combines the latest technology with traditional methods to increase the quality of the cheeses without disturbing the natural equilibrium during the production process. Take part in a practical demonstration making Mozzarella from cow’s milk, and a professional and technical tasting of two specialities: Mozzarella and Caciocavallo.
La Fabbrica Della Pasta di Gragnano Pasta Producer
Students can see the production process using durum wheat semolina, to create one of Italy’s most iconic foods at this family-run business. During a guided tour of the factory, see how durum wheat is fed into the mill and separated from the bran to create semolina and then transformed into the different types of pasta from short-cut extruded pasta such as Penne, to ribbon-cut noodles such as Fettuccine. After the tour students will receive a small memento from La Fabbrica Della Pasta.

Group leaders are advised to consider this in their risk assessments/group management plan and ensure appropriate control measures are put in place.

Security Deposit
Please note there is a €10 per person security charge payable in cash on arrival at the hotel. This is refundable at the end of your stay providing there is no damage. In order to avoid misunderstanding, we suggest all group leaders undertake an inspection of all rooms with hotelier/centre manager on arrival and departure and any existing damage is immediately reported.
